Reconstitution Ratios: Please note that all Big Chunks
versions reconstitute (add weight) at about a 3-to-1 ratio because
of water uptake. Preparation: Cooking them is simple: you
just boil in hot water for about 20 minutes before using in place
of meat. See our main Heartline Big Chunks page, to
purchase flavored versions, which use the same recipes used in
our
Stonewall's line.
Nutritional profile of the flavored versions is nearly
identical to Stonewall's. Protein Count: Since these
chunks are textured vegetable concentrates, the protein counts
meet or exceed 70% by weight.

he introduction of
Heartline "Big Chunks" caused several of our institutional
customers to ask more detailed questions about the underlying
soy protein used to make them. As you may have read on the
primary Heartline "Big Chunks" page, all products are created
using what we have designated "Series 180" (2 to 3 inches squared
and pancake thin) and "Series 185" (two inches squared, thicker,
more "biscuit-like").
We are very excited about this soy protein, which is made in
Ashdod, Israel by a company named "Solbar Hatzor." It is
the "substrate" for the entire Heartline Big Chunks line.
(Distributors in the U.S. have to import the product from
ADM Soya Mainz in Germany by the full container load.)
If
there is anything we understand at Lumen Foods, it is that
a meat replacement succeeds on the basis of its realistic
texture and flavor. These chunks have the most realistic
"meat-like texture" of any in the world.
Each
box below weighs 10 kg. (slightly over 22 lbs.), and once
reconstituted will make between 65 and 70 lbs. of "meat."
You can take out as much or as little as you want. Shelf-life
is well over 5 years. Simply store in a cool, dry place.
