GP-150 TM

Natura Scio
GP-150 (GLO1500*) is a aqueous solution (viscosity: 6.02 cP; pH: 9.1) designed to work with a wide variety of foods and beverages. GP-150 works on two levels:

  1. Anti-microbial -- it provides stronger anti-microbial action against bacteria, mycologicals (i.e. fungus producing mold), and yeast. Although many GRAS-approved preservatives do this same job now, GP-150 does it using less additive solid, by weight, thereby producing more cost effective use -- and less impact on flavor profile in many applications.
  2. Organoleptic Stability -- All anti-oxidants (natural or phenolic), preservatives, color stabilizers, and other food additives can be broadly said to provide some contribution to "organoleptic stability" -- the retardation of shifts in the smell and taste of freshly prepared foods. However, organoleptic stability is about more than merely preventing spoilage (a term normally associated with microbial activity), it is about the ability to "freeze" the product in time so that it tastes fresh several weeks after it is produced. This is a particularly tough challenge to IM-mode foods (intermediate moisture - in the 15-50% moisture range) with lower A(w) water activity levels. GP-150 provides unusually strong protection to foods -- nor is it restricted to solids -- for example, freshly brewed coffee or teas have been shown to taste two to three times longer with that "freshly brewed" quality than without the addition of GP-150.
USAGE ---- Usage will vary from one application to another, but we recommend between 1 to 2%. Factors which provide some downward pressure on usage level include (not all inclusively) pre-existing anti-microbial preservatives, solute level (i.e. sugar, salt), reduced storage temperature (i.e. refrigerated or frozen), opaque packaging material (i.e. ambient light will quicken the aging process in some foods), reduced water activity (Aw) or pH levels in the product (i.e. if the substrate is running 4.5, you would need slightly less GP-150 than if the product were running 7.5), and the presence of certain trace metal ions.

MORE COMMENTS ON pH ---- One of the strengths of GP-150 is that it performs over a broader pH than other straight-use food grade preservatives, including sorbates (still effective at 6.0 to 6.5; more effective below, and ineffective above 7.0), benzoates (4.0 to 4.5), and propionates (5.0 to 5.5). To prove this point, initial anti-microbial studies on GP-150 were done at a pH of 7.05.

INCREASED SOLUBILITY & REDUCED WATER-TO-FAT PARTITION PROBLEMS. Potassium sorbate is far more water soluble than sorbic acid (at 20 degrees C, pH 3.1, K-sorbate is 58.20% soluble; sorbic acid, only 0.15%). Yet GP-150 is more than 75% soluble in water; and 30% soluble in lipids. In some substrates, acting alone or in concert, it will assist in emulsification of the finished product.

STORAGE INSTRUCTIONS ---- GP-150 is best kept in a cool, dry place - with even greater life provided when refrigerated, though this is not required. To maximize the performance of this product, we recommend that it be deployed into the target food substrate within 30 days of receipt from Natura Scio or our distributors. This product contains some potassium sorbate, and although techniques are incorporated into the manufacturing process to maximize effectiveness, the fact remains that virtually all sorbates in solution, will -- given enough time -- degrade into other carbonyl compounds (i.e. various aldehydes, formic acid, etc.) This is hornbook food science. We recommend that our customers purchase enough GP-150 to incorporate into a month's turn of raw ingredient inventory.
AVAILABILITY, PACKAGING & PRICING ---- Product is available with 24 to 48 hours, FOB Lake Charles, Louisiana. It comes in one gallon bottles, 55 gallon drums, and 300 gallon totes. Pricing is quoted by the pound (density: 9.25 pounds per gallon) with retailing prices starting at about $ 0.75 per pound. Contact us for more details.
SAFETY ---- See MSDS.
GP-150, like all Natura Scio' products, is kosher-certified, and manufactured in facilities holding an "excellent" rating with the American Institute of Baking (AIB).
